Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 12 oz green beans, trimmed
  • 1 cup cherry tomatoes, halved
  • 1 lemon, thinly sliced
  • 2 tbsp olive oil
  • Kosher salt & pepper, to taste

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Toss green beans + tomatoes with 1 tbsp olive oil; spread on sheet pan.
  3. Place salmon fillets on top, drizzle with remaining oil, season with salt/pepper, and top with lemon slices.
  4. Roast for 12–15 minutes, until salmon flakes easily and reaches 145°F internal temperature.
  5. Serve with pan juices and fresh lemon.

Chef’s Tips:

  • Add fresh dill or parsley before serving.
  • For crispy skin, place salmon skin-side down on lightly oiled foil.
  • Use zucchini or asparagus in place of green beans.
