Ingredients
- 4 salmon fillets (about 6 oz each)
- 12 oz green beans, trimmed
- 1 cup cherry tomatoes, halved
- 1 lemon, thinly sliced
- 2 tbsp olive oil
- Kosher salt & pepper, to taste
Instructions
- Preheat oven to 425°F (220°C).
- Toss green beans + tomatoes with 1 tbsp olive oil; spread on sheet pan.
- Place salmon fillets on top, drizzle with remaining oil, season with salt/pepper, and top with lemon slices.
- Roast for 12–15 minutes, until salmon flakes easily and reaches 145°F internal temperature.
- Serve with pan juices and fresh lemon.
Chef’s Tips:
- Add fresh dill or parsley before serving.
- For crispy skin, place salmon skin-side down on lightly oiled foil.
- Use zucchini or asparagus in place of green beans.
